Check out Joplin. It runs on Windows, Linux, and MacOS. It allows for signed end-to-end encrypted notes on remote storage (OneDrive, your own server, or their server). It has a plugin architecture and is extensible.
And it runs on Catalina which Beaver does not.

I was unable to use this application. I meet the requirements -- Intel MacBook Pro, Monterey 12.7.1, etc. -- and I missed the initial dialogue box because I thought it was just telling me that I was running an app from an unsigned developer, but that's obviously not what it was saying because when I clicked continue, it deleted the app and, from that point forward, just insists that "The application BeaverNotes.app can't be opened". Someone else said that it had been confirmed to contain malware; very disappointed, because I've been looking for a good notes app since Apple discontinued the Notepad from OS9, and this seemed promising. Oh well.
Users, beware.

When I tried to open this, the macOS system's security popped up and said it contains malware and will damage the computer. I'd never seen that before, only the unidentified developer warning so Apple couldn't scan. This was the first confirmed containing malware.
