Apple's Calculator app (at least in OS X 10.3 Panther), includes slightly over 100 units to convert between. ConverTable Units currently includes over 400 units, and you can add your own units via plug-ins, which you cannot do with Apple's Calculator app.
ConverTable Units shows you the math and method behind the conversions; it is a teaching tool, Apple's Calculator app does not show the math or method behind its conversions.
ConverTable Units' calculator has an RPN mode, which Apple's Calculator app does not have.
ConverTable Units can convert units in external text files, which is very handy for converting large sets of data.
The main purpose of Apple's Calculator app is to be a calculator, and it does that quite well. ConverTable Units' main purpose is to provide and teach unit conversions, and we think it does that quite well!
