As we found out the hard way, Adobe will not allow you to upgrade your previous (in this case) Illustrator software if it was part of the Creative Suite bundle. So regardless of the fact that you have a folder on your computer that is named Adobe Illustrator CSx with a program inside named Adobe Illustrator CSx that when opened presents a splash screen stating Adobe Illustrator CSx, you in fact do not have an eligible version. In addition, other than a small link at the bottom of the page leading you to an upgrade eligibility "tool" page (which in turn gives a rather ambiguous answer), nothing informs you of what is or is not required to upgrade other than a copy of "Adobe Illustrator CS4, CS3 or CS2"...of which I indeed have.
After 30 minute of inane questions from online chat support, they agreed to provide a refund w/ my Amazon.com receipt. We shall see if Adobe, first indeed provides a full refund, and second, how long it will take such a refund to emerge.
In any case, this is a terrible policy and further evidence that ADOBE SUCKS!!!! SO PLEASE BE CERTAIN BEFORE YOU PURCHASE THIS UPGRADE THAT YOU ARE UPGRADING FROM AN INDIVIDUAL COPY OF ILLUSTRATOR; NOT ONE THAT CAME WITH CREATIVE SUITE.
(FYI...I'd rather read a Russian newspaper upside-down than watch a Flash ad!)

I myself have experienced the apparent slow-down over time, as well as the onset of "weird" behavior not originally exhibited. I was hoping that the 15.0.2 update would fix these anomalies, but it did not happen. In fact, the problems became worse.
I then decided to reinstall Illustrator. The uninstaller app, or rather its alias, can be found in the same folder as the application. The uninstall-reinstall-update procedure took no more than 15 minutes and now the program is running very well—better than ever. It now takes about 5 seconds to launch on my ageing MacPro3,1 (with several hundred fonts active in the system).
It seems like Illustrator is susceptible to degradation and damage over time, but it's not an issue that a fresh installation can't remedy.

While the CS5 suite has been assumed to be entirely 64-bit, only Photoshop, After Effects and Premier are 64-bit. Illustrator is 32-bit.

Damn it! Its totally unresponsive when dragging the hand at 800x. I mean, I don't even get a frigging beach ball. It just sits there and totally ignores my attempt to pan. Fortunately, I don't have these problems in Photoshop. But I have to earn my living with Illustrator (consumer package design) and this is absurd.
I had to strike while the corporate iron was willing and got my 8 core off the shelf at MicroCenter so it admittedly has the slower video card. But all that I have read says you only need the top card for 3D graphics. Am I wrong?
And one more thing, I use Menu Meters so I've always got a visual representation on processor load. Well, I have yet to see Illustrator CS4 using more than one core at a time. I might as well go back to Rosetta.

CS3 was the first native Intel version of Illustrator, so I don't know what you mean by "CS3 has been putting around in Rosetta." I was thrilled to upgrade to CS3 in order to get away from the terrible Rosetta performance of CS2 under Rosetta.
My relatively lightweight MBP--compared to your desktop--functions quite snappy, even with large files with 50+ layers. Granted, Adobe could improve their products immensely on the Mac; they've become more of an MS Windows company. Whereas, I don't doubt you are having problems, I just don't believe it's the software in this case.
P.S. - Are you sure you aren't running Illustrator in Rosetta? Check using the Activity Monitor. You can also check to see if the "Open using Rosetta" check box is checked by using "Get Info" on the Illustrator app. If it is checked, uncheck it.

The 15.02 update installed fine for me, but I have seen reports of others having problems. If you have HTML5 Pack for Illustrator installed or Suitcase Fusion 3, they may be causing a conflict. I can't remember the links for fixing the Suitcase Fusion problem, but here's a link that addresses the HTML5 Pack for Illustrator issue:

Basically, the advice is to uninstall the pack (replace the original plug-ins) before installing the 15.0.2 update. Posters #5 and #6 in the thread gave the most helpful tips. Good luck.

Another helpful piece of advice from that thread is to completely uninstall and reinstall Illustrator, then apply both the 15.01 and 15.02 updates -- it sucks, I know, but several people have reported success by doing that.
Failing that, a user in the aforementioned thread named bhatnaga is personally helping people resolve their issue if you post a log file. Follow his/her instructions on page 2, post #50.
