Jitsi (previously SIP Communicator) is an audio/video and chat communicator that supports protocols such as SIP, XMPP/Jabber, AIM/ICQ, Windows Live, Yahoo!, Bonjour and many other useful features. Jitsi supports the ZRTP protocol stack by Phil Zimmerman for encrypted private communications.

http://download.jitsi.org/jitsi/macosx/jitsi-1.0-beta1-nightly.build.3820.dmg installed fine for me - although I was not able to get a voice connection using jabber.
Not really a Mac-App, the prefpane is divided into an expert and a "Wizard-Style" mode. Only nightly builds available. Didn't connect with same settings used in "Telephone" and "iSoftPhone"
