SuperCollider is a programming language and engine for creating interactive electronic music compositions. Sound processes can be controlled by the mouse, MIDI, or a Wacom tablet. There is a mini GUI builder for creating graphical control panels. Since it is a programming language, it is extremely flexible in what you can do with it, but does require some facility with concepts of programming and computer music.
Requirements
PPC, PowerPC, MacOS 9.0 or later.

Excellent application.. once you figured out how to press ENTER. There are two enter buttons on my keyboard... The tool could have more sexy interfaces, more usability, when you want to switch between two different patches... but nevertheless it is one of the best things i've tried to improvise and create my own sounds (along with NI Reaktor, Ableton Live, Max/Msp, AudioMulch on PC and maybe phatmatik Pro). You really should make the effort to figure out how it runs. The effort is worth it as a new world of sounds is near.

I love this tool.
It's free (whereas max/msp is not).

Wait for updates if not using SC 2.2.16;
there is an alpha for OSX......
